Two cups of peeled ground almonds
A cup of powdered sugar
A spoonful of almond essence
In a bowl, mix together the ground almonds and sugar. Beat the egg whites at medium speed in a mixer, and add the almond mixture and almond essence to the eggs. Beat again at medium speed for half a minute to get a soft dough. Preheat the oven and start shape into balls. Put an almond into the center of each ball for garnish. Bake for 15 minutes, until the balls flatten down.
